Kiss Me Cookies For Home Baking
These awesome Kiss Me Cookies are easy to make and are a fun way to spread the love this Valentine’s Day!
Here’s what you need
- 1 cup of caster sugar
- 2 eggs
- 200g butter
- 3 cups of plain flour
- 1 tsp vanilla essence
- 1 tsp bicarbonate of soda
- Half cup raspberry jam
- Half cup hundreds and thousands
- 2 Baking Trays
ICING
- 2 cups of icing sugar
- 2 tbs water
How to create your Kiss Me Cookie
- Preheat your oven to 180C
- Put sugar and butter in a mixing bowl and combine with an electric mixer
- Add flour, essence, bicarbonate of soda and both eggs
- Knead dough with your hands until mixture resembles into slightly tacky (your finger sticks to the dough a little bit but no dough comes off at all)
- Wrap in cling film and place in fridge for at least 30 minutes
- Line two baking trays with baking paper
- Lightly flour a surface and roll the dough out to around 5mm thick
- Cut out with cookie cutter and place onto floured tray around 2cm apart
- Repeat rolling, cutting and placing until all the dough is used
- Place in oven for 10 minutes or until the cookies start to colour
- Remove from oven, cool slightly before removing to a wire rack to cool completely
- Match the biscuits into evenly sized pairs, spread one with jam, sandwich together, then spread the top with icing and sprinkle on hundreds and thousands
